Japan Begins Shipments of RAS-Raised 'Kabosu Salmon' from Oita

OITA — Towa Suisan Co., Ltd., a subsidiary of NTT Green & Food Corporation, has officially started shipments of Japan’s first “Kabosu Salmon”, a RAS (Recirculating Aquaculture System) land-based product developed in Oita Prefecture.

The salmon is uniquely produced using kabosu, a citrus fruit for which Oita accounts for approximately 90% of national production. By incorporating locally grown kabosu into feed, the company has succeeded in introducing limonene, a citrus-derived aromatic compound, into the fish.

According to the company, this results in a reduction of fishy odor and a more pronounced umami flavor, improving its quality particularly for sashimi consumption.

Towa Suisan plays a vital role as a pillar of the local fish distribution system and approaches its daily work with freshness, quality, and reliability as top priorities.

The innovation builds on previous developments such as “Kabosu Flounder” and “Kabosu Pufferfish”, where similar feeding techniques were applied. Trials for Kabosu Salmon began in 2023, carried out in collaboration with the Oita Prefecture Northern Fisheries Group and regional fisheries stakeholders. Following confirmation of stable limonene accumulation, the company has now moved to full-scale commercial shipments.

Produced through land-based RAS technology, the salmon benefits from controlled farming conditions supported by NTT Group’s Information and Communication Technology (ICT). This enables real-time monitoring, improved environmental management, and consistent product quality, while supporting more sustainable aquaculture practices.

From reliance on human expertise to aquaculture powered by Physical AI: NTT Green & Food (hereinafter NTT G&F) aims to standardize workflows and develop Physical AI systems that integrate artificial intelligence—capable of learning and modeling these standardized processes—with robots designed to ultimately execute physical tasks.

The product is currently being supplied to corporate clients and restaurants, with applications ranging from traditional sashimi to Western and fusion cuisine.

Looking ahead, Towa Suisan Co., Ltd. stated it will continue its efforts in Kamae, Oita Prefecture, under its mission of “bringing the bounty of the sea closer to everyone,” contributing to solutions for food security and environmental challenges at local and global levels.

日本・大分県 — 2026年4月1日NTTグリーン&フード株式会社の子会社である東和水産株式会社は、日本初となる**「カボスサーモン」の出荷を正式に開始した。これはRAS(循環型養殖システム)による陸上養殖**で生産された製品であり、大分県で開発された。

このサーモンは、全国生産量の約90%を占める大分県特産の柑橘類であるカボスを活用している点が特徴である。地元産カボスを飼料に配合することで、魚体内に柑橘由来の芳香成分であるリモネンを取り込むことに成功した。

同社によると、これにより魚特有の臭みが軽減され、うま味がより際立つことで、特に刺身用途において品質が向上しているという。

この取り組みは、これまでに開発された**「カボスヒラメ」「カボスフグ」に続くものであり、同様の飼料技術が応用されている。カボスサーモンの試験は2023年**に開始され、大分県北部水産グループおよび地域の水産関係者との連携のもとで実施された。リモネンの安定的な蓄積が確認されたことを受け、同社は今回、本格的な商業出荷へと移行した。

陸上RAS技術によって生産されるこのサーモンは、NTTグループの情報通信技術(ICT)により管理されている。これにより、リアルタイム監視や養殖環境の高度な管理が可能となり、安定した品質効率的な生産、さらには持続可能な養殖の推進が実現されている。

本製品は現在、法人顧客および飲食店向けに供給されており、刺身だけでなく、洋食や創作料理など幅広い用途での活用が期待されている。

今後について、東和水産株式会社は**「海の恵みをもっと身近に」という理念のもと、大分県佐伯市蒲江を拠点に取り組みを継続し、食料問題環境課題**の解決に向けて、地域および世界規模での貢献を目指すとしている。
