Prior to launching akvacobia, Nordic Group and Marine Farms commissioned an independent culinary consulting firm to evaluate the product across a variety of preparation platforms. This study provides an insight on how the product would perform in commercial operations.
The results prove that akvacobia maintained an excellent flavor and texture across a variety of preparation methods. The flavor profile compares well to both swordfish and yellowfin tuna. Food service operators consider this flavor profile “prime” because it scores so high in consumer preference.
