The concentration and a significant penetration of international capital are the two features that best define the business structure of the Spanish smoked fish sector. The main company in the smoked sector presents volumes of more than 2,300 tons, with a turnover of 28.8 million euros. The second reaches 1,000 tons, while the third remains at 770 tons. Three other operators present production figures between 600 and 660 tons. There are twenty companies that record productions above 150 tons per year.
The Spanish production of smoked fish is around 5,600 tons, with year-on-year increases of more than 10%. The value of this production can be around 73.5 million euros. The market is dominated by salmon, which represents 79.5% of sales in modern distribution. Far behind are pomfret (7.7%), trout (5.4%), assorted fish (2.5%) and cod (2.4%).
