Rosselkhoznadzor clarified which fish product cannot be called caviar

Structured caviar is in fact not caviar, but a caviar fish product, which is often not indicated on the packaging, the Federal Service for Veterinary and Phytosanitary Supervision (Rosselkhoznadzor). Structured caviar is caviar mass with the addition of complex nutritional supplements.

“In violation of the law, the word “structured” is usually printed in a much less noticeable font than the word “caviar,” explain the department’s experts.

On the eve of the New Year holidays, representatives of the supervisory service ask consumers to pay attention to product labeling. “Especially on the name and composition, and do not allow unscrupulous producers who call caviar a fish product containing an unknown amount of chemical food additives to mislead themselves,” commented Rosselkhoznadzor.

Previously, “Veterinary Medicine and Life” told how structured caviar differs from natural caviar.

At the same time, Rosselkhoznadzor notes a decrease in the production of imitation caviar against the backdrop of a successful salmon run.

“The share of simulated caviar in the total volume of salmon caviar production in Russia at the end of 10 months of 2023 amounted to 2% and is trending downward,” the department reported. According to the Rosselkhoznadzor VetIS system, 34.7 thousand tons of natural caviar and 718 tons of simulated caviar were produced in 10 months.

Over the same period last year, the country produced over 16.8 thousand tons of natural salmon caviar and more than 1.7 thousand tons of imitation.

“The production of salmon caviar this year has more than doubled due to the successful salmon caviar. At the same time, the production of imitation caviar decreased by 2.4 times,” representatives of the service note.

Rosselkhoznadzor named the leaders in the production of natural salmon caviar. As last year, these are the Kamchatka Territory and the Sakhalin Region. These regions account for more than 50% of the volume of salmon caviar from the total production.

Imitated salmon caviar is produced by business entities registered in St. Petersburg, Kamchatka Territory and Vladimir Region.

The production of structured salmon caviar remains almost at the same level as last year. Over the 10 months of 2022, 748 tons were produced, in 2023 – 761 tons. This type of product is produced in the Kamchatka and Krasnodar territories, St. Petersburg, Moscow, Moscow and Novosibirsk regions.
