'Significant deviations in determining the glaze content...'
The issue of changing the method of calculating glaze is being discussed in Russia
(RUSSIAN FEDERATION, 7/3/2023)
Rybny Soyuz (Fish Union) and VNIRO are discussing the issue of changing the glaze calculation method
A working meeting was held in the Fish Union with representatives of the All-Russian Research Institute of Fisheries and Oceanography (VNIRO) on the issue of introducing changes to the methodology for calculating ice glaze on fish food products, provided for by GOST 31339-2006 “Fish, non-fish objects and products from them. Acceptance rules and sampling methods”.

Glaze regulation has been a debatable issue for many years, in fact, since the adoption of the EAEU Technical Regulation 040/2016 “On the safety of fish and fish products”.
The fact is that the current methods for determining the norms of glaze in fish food products, provided for by the technical regulations, are technologically imperfect and require significant metrological changes.
The studies conducted by VNIRO showed "low convergence" of the results, that is, large deviations in the study of the same samples of fish products using different methods.
Work in this direction will be continued.
“Significant deviations in determining the glaze content, given the strict and small assumptions in the regulatory documentation, in practice often create serious difficulties for conscientious manufacturers and suppliers of fish and seafood products. Therefore, of course, the issue of clarifying and refining the methodology requires serious attention. I am sure that industry experts, together with scientists, will be able to find a balanced solution to the problem,” said Alexander Panin, Chairman of the Fish Union.
