Maruha Nichiro: 'Salmon is the most consumed dish in conveyor belt sushi restaurants for 13 consecutive years'

Conveyor Belt Sushi Consumer Survey 2024

Maruha Nichiro Co., Ltd. (President and CEO Ken Ikemi) conducted, from February 20, 2024 to February 22, 2024, the 14th "Conveyor Belt Sushi Consumer Situation Survey", a survey of online research conducted among men and women ages 15-59 nationwide using conveyor belt sushi. restaurants at least once a month and a sample of 3,000 valid responses was collected. (Research partner company: Net Asia Co., Ltd.)

Top three things to consider when choosing a conveyor belt sushi restaurant: "Low prices" "Close to home" "Fresh ingredients"

They asked 3,000 men and women (all respondents) aged 15 to 59 from across Japan who visit conveyor belt sushi restaurants at least once a month about what they consider important when choosing a conveyor belt sushi restaurant. "Low price" (42.4%) was the highest, followed by "Close to home" (30.8%), "Fresh ingredients" (29.1%), "Wide variety of ingredients" (26.4%). %) and "Order via touch panel". "I can do it" (26.3%).

When all respondents (3,000 people) were asked how many dishes of sushi they usually eat at conveyor belt sushi restaurants, the answers were "5 to 9 dishes" (39.5%) and "10 to 14 dishes" (39.8%). Responses, with an average of 9.9 dishes.

When all respondents (3,000 people) were asked how much they usually pay per person when using conveyor belt sushi restaurants, the most common answer was "1,000 yen to less than 2,000 yen" (53.6%), the average was 1,804 yen .

By gender, the average cost was 2,018 yen for men and 1,590 yen for women, an increase of 428 yen for men.

When all respondents (3,000 people) were asked what they often eat when they go to conveyor belt sushi restaurants, the number one choice was "salmon" (50.6%), for the 13th consecutive year since the 2012 survey. We got first place. "Salmon" seems to have firmly established itself as the most popular product. After that, second place was "Tuna (lean)" (36.3%), third place was "Yamachi/Buri" (31.7%), fourth place was "Shrimp" (29.1%) and fifth place was `Tuna (medium fatty)' (27.7%).

By gender, the number one choice for both men and women was "salmon" (45.4% for men, 55.7% for women), the second for men was "tuna (lean)" (40.1%) and the third for "yamachi/yellowtail" (31.8%). For women, second place was "shrimp" (34.5%), followed by third place was "tuna (red meat)" (32.5%).

Favorite salmon sushi: "grilled salmon"

When we asked people who usually eat salmon at conveyor belt sushi restaurants (1,517 people) what their favorite salmon sushi was, the number one choice was "grilled salmon" (50.0%). "Grilled salmon" has become popular, which has a distinctive aromatic flavor. Subsequently, second place was "Salmon (without arrangement)" (46.6%), third place was "Onion + Salmon" (35.7%), fourth place was "Avocado + Salmon" (24.1% ) and Fifth place was occupied by "Cheese + Salmon" (22.3%).

By sex, 29.2% of women preferred “avocado + salmon”, 11.3 points more than men (17.9%).

By generation, among adolescents, "salmon (unfixed)" (58.2%) took first place. Additionally, there was a trend among older generations to have higher prices for "onion + salmon."

Reasons why people eat salmon more often: "It's fatty and delicious" "There are many types of salmon, such as grilled salmon or salmon with onions"

When we asked people (2,967 people) who had a favorite ingredient to choose when they go to a conveyor belt sushi restaurant, number one was salmon (22.5%) and second was tuna (22.5% ). "Yamachi/Buri" (7.2%), fourth place was "Shrimp" (6.7%) and fifth place was "Tuna (medium fatty tuna)" (4.7%).

When they asked the reasons for the "salmon I eat most often," they discovered that salmon, which came in first place, was "because it is fatty and delicious," "because it comes in many varieties, such as grilled or covered with onion" and because it is edible. Some of the answers include: "Because it is easy to eat" and "Because the menu has a variety of arrangements, so you can eat deliciously without getting bored." This seems to be due to its high fat content, its ease of consumption and the wide variety of menus available. Regarding the 2nd place "Tuna (red meat)", "It is delicious without being addictive, and has the image of being a classic", "Because it is refreshing", and the 3rd place "Yamachi/Buri": " Because it has a good texture.'' One response was: "It's refreshing but has a rich flavor and a good aftertaste."

When we asked all respondents (3,000 people) what they eat first when they go to a conveyor belt sushi restaurant, the first place was "salmon" (20.9%) and the second place was "tuna (red meat)." '' (12.1%), 3rd place "Yamachi/Buri'' (7.7%), 4th place "Tuna (medium fatty tuna)'' (6.3%) and 5th place "Shrimp'' (5 ,2%) .

By gender, for men, 1st place was “Salmon” (17.4%), 2nd place was “Tuna (lean)” (13.9%), 3rd place was “Tuna (medium fatty tuna)” (7.9%). %), and for women, the first place was "Salmon" (24.3%), the second place "Tuna (lean)" (10.3%) and the third place "Yamachi/Buri" ( 7.9%).
